Italian Collagen Wrap Sheet - 100cm long X 50cm wide.

Used in the production of cured meats such as pancetta, capocollo and prosciutto.

Used to wrap your seasoned meat, giving it a protective layer during the drying and curing process. This wrap sheets will allow moisture to be released from the meat, along with assisting the meats drying process. At the same time creating a secure barrier to avoid any contamination and infections in your raw produce as it hangs and cures.

• Can be used wet or dry.
• Holds approximately 3kgs of meat.
• Can be cut to your desired size.
