The purposes of this book are several.
First to continue identifying the more unusual products or those which are not as well known as those which are commercially available.
Secondly to experiment with with some different products and techniques. It is for that reason some game meat products as well as seafood based charcuterie are included. It follows that the book assumes a degree of familiarity with the basic techniques and reasons for each step on charcuterie production. It is intended for those who are content to embrace different products and also some challenging products.
Next it was an opportunity again to include products from different cultures notably French and German. Finally I have included recipes adapted from those which were generously given to me by a commercial producer whom I met when ZI was in prague several years ago.
